How do the 3mm, 4mm and 5mm stars differ?

The millimeter figure is the width of the star itself, so 3mm is the smallest option and 5mm the largest.

Do the Color and Size numbers measure the same thing?

No. The number in the Color label is the star width, and the number in the Size label is the length of the post.

Will the head-only option fit a post I bought elsewhere?

That is not confirmed. The top is made for matching Marafine components, and fit with other sellers' posts or backs is not something we can promise.
